Delicious Recipe of the Month – July 2015
Tangy and full of flavor, this 3 bean salad makes a perfect side-dish for a summertime backyard barbecue or make it your entree for a tasty vegetarian lunch. You can’t go wrong with beans; one of the world’s most nutrient-dense foods.
Here’s a sample recipe that serves eight:
Ingredients:
- 15 oz Garbanzo Beans
- 14 ½ oz Cut Green Beans
- 15 oz Dark Red Kidney Beans
- 11.9 oz Marinated Artichoke Hearts (Sprouts brand recommended)
- 6 oz Medium Black Olives (Lindsay Naturals brand recommended)
- ¼ Red Onion, medium
- ¼ cup Parmesan Style Topping (Go Veggie brand recommended)
- ¼ cup Lite Balsamic Vinaigrette (Newman’s Own brand recommended)
Instructions:
- Rinse beans thoroughly, and place into a serving bowl.
- Thinly slice red onion and mix with beans.
- Add artichoke hearts and black olives.
- Mix salad mixture with Balsamic Vinaigrette and Parmesan cheese.
- Refrigerate for a minimum of 30 minutes before serving, and enjoy!

Delicious Recipe of the Month
These Parmesan Cauliflower Poppers are full of flavor but not full of calories! Enjoy them as a snack or flavorful side dish. Packed full of Vitamin C, Vitamin B6 and Magnesium, this cruciferous vegetable ranks among the top 20 foods in regards to ANDI score (Aggregate Nutrient Density Index), which measures vitamin, mineral and phytonutrient content in relation to caloric content. So give these Parmesan Cauliflower Poppers a try, as it will transform a picky I-don’t-like-vegetables eater into a cauliflower addict.
Here’s a sample recipe that serves four:
24 oz of cauliflower
2 large eggs
½ cup of Go Veggie Vegan Parmesan Cheese
½ cup of Gluten Free Breadcrumbs
2 minced Garlic Gloves
2 tbsp of Italian Seasoning
1 tbsp of Garlic Powder
1 tsp of Salt
1 tsp of Fresh Cracked Pepper
Instructions:
Preheat the oven to 400 degrees Fahrenheit.
Clean cauliflower and cut into bite sized pieces.
Beat eggs in a large bowl. Add breadcrumbs, cheese, and spices to a large bowl and mix well.
Add cauliflower pieces to egg mixture and toss well, be sure to completely cover all the little nooks and crannies.
Dip Cauliflower pieces in breadcrumb mixture until fully coated. Place on a baking sheet and sprinkle with minced garlic cloves.
Bake for 20-25 minutes until the coating is golden brown and crunchy.
Serve with marinara or another favorite sauce for some extra flavor, and enjoy!
